On Aug. 30, the Lang Son Provincial People’s Committee Office announced that the Vietnam Record Organization (Vietnam Record Association) has just issued Decision No. 37/KLVN-TOP/2022 establishing the Top 100 Specialty Dishes, Products and Top 100 outstanding gifts and specialties from 63 provinces/cities of Vietnam (the fifth time in 2021 – 2022), in the journey to find and promote Vietnam’s culinary values ​​and specialties.

Here, Lang Son selected 4 products, namely Lang Son roast pork with molasses and humiliation (braised meat) among the top 100 Vietnamese specialties; Trang Dinh Black Jelly and Mau Son Wine were selected among the top 100 specialties of Vietnamese gifts.

These Lang Son products are announced and featured on the web portals of Vietnam Record Organization, Top Vietnam, Global Vietnamese Record Organization, Record System media channels in the Vietnamese continent.

Lang Son is a province with a very rich and diverse culinary culture, where fried pork with magnolia leaves stands out. This is considered a traditional dish with bold features of the Land of Lang.

– Fried pork is not only a popular daily dish of people, but also a mandatory offering at festivals, weddings, funerals, and expresses a part of ethnic minority culture here.

Compared to other regions, Lang Son roast pork has its own unique taste. After pre-processing, the chef stuffed the pig’s belly with nectarine cake, a type of forest leaf commonly used in the Tay and Nung ethnic groups. The pig is roasted over a charcoal fire, so that the meat is evenly cooked, the chef rubs oil and wild honey mixed with vinegar on the pig’s body. When the pig is cooked, use a cloth dipped in cold water to wipe the body of the roasted pig, and then fan the fire very hard to make the pig skin swell. When eaten, the skin is crispy, the flesh is tough, and has a very specific flavor mixed with the aroma of the leaves.

According to popular belief, the roasted pig is an object with a rounded appearance that symbolizes wealth and good luck. Currently, most of the central markets in the districts and cities of Lang Son Province sell this roasted pig.

– Mau Son Wine is a delicious specialty wine made by the Dao people who live on the peak of Mau Son, Lang Son. The wine is hand-distilled using a method that has been traditional for millennia, using rice, pure water from mountain streams over 1,000m above sea level and forest leaf yeast made from more than 30 rare herbs. .

– Lang Son is the province that grows the most black heather in the country. Black jelly dish made from black jelly has a cool, delicious taste, which is loved not only by the Langer, but also by many tourists in the summer.

Since ancient times, black jelly has been cooked and used at home by ethnic peoples of the Land of Lang as a familiar snack. Later, some families with a long tradition of cooking jelly still cultivate and sell them in the market when summer comes.

At present, the black jelly manufacturing process has been improved with the help of a series of machines and equipment to save jelly makers time and effort. At the same time, to meet the production demand in bulk for the market expansion and promotion of Lang Black Jelly products.

Lang Son Province will continue to promote and introduce images and values ​​of famous provincial specialties, especially the above 4 top specialties in conjunction with cultural activities, tourism promotion and other events, important events and celebrations of the province in the coming period.

Last year, the production of black jelly in Lang Son Province reached 16,000 tons, up 36% from 2020; The total export turnover is estimated at USD 7.5 million. As a target for 2022, Lang Son province is targeting black heather export sales to be around USD 10 million.
