It has rained for a long time this year, but the profession of making vermicelli and rice paper requires sunlight to dry the products. Therefore, this year’s tet bun cake attracts customers.

This year, unfavorable weather has caused “trouble” to An Thai Noodle Village in Nhon Phuc Township (An Nhon City, Binh Dinh) many times.

According to Mr. Duong Thanh Cuong, chairman of the People’s Committee of Nhon Phuc Municipality, the municipality currently has about 50 rice paper production bases and 30 noodle production bases. Previously, most of the people who worked in vermicelli production in Nhon Phuc did it manually, so the output was not high. In recent years, many households that make vermicelli here have invested in machinery, so Song Than vermicelli, rice vermicelli, yellow vermicelli, vermicelli…and rice paper are mass-produced to supply the national market.

However, machine-coated rice paper mainly produces thin rice paper for dipping, while thick rice paper for baking is mainly produced by manual oven. During the months of the year, the noodle production facilities at Nhon Phuc operate daily, enough to supply customers across the country, particularly the central highland market. By Lunar December, noodle production facilities begin to accelerate to increase production to satisfy consumers during the Lunar New Year.

This year, right at the beginning of December, the sky in Binh Dinh “swallowed”, the rain stopped and the households working in the noodle shop had to “hang up the oven” to suffer unemployment. Because the profession of pasta making needs to be sunny to dry the product. Outside, when it rains, the owners of the noodle factories also wither away.

The rain lasted 20 days until on December 20 (January 11, 2023) the weather began to dry. At the beginning of December 21st the sun is shining, the vermicelli ovens in Binh Dinh are full of fire and producing at full capacity to supply products for the market. A Thai noodle village in Nhon Phuc township is no exception. .

However, the sun only shone for a few days, on December 26, the sky in Binh Dinh was cloudy again, pouring rain, the vermicelli ovens had to shut off the fire, while consumer demand for bun cakes during the Tet holiday The Lunar New Year of Rabbit 2023 is “hot”.

According to Mr. Vo Van Tam (70 years old) in Nhon Phuc Township (An Nhon City, Binh Dinh), his family has to complete the vermicelli-making stages every day from 11:30 p.m. To make 1kg of Song Than vermicelli, 1.2kg of green bean powder must be used. On average, when it’s sunny, his family can produce more than 1 quintal of pasta a day. During the Tet holiday, Mr. Tam’s family had to hire more helpers in addition to the domestic workers to keep up with the acceleration of the profession and the needs of the market. Currently, he sells vermicelli Vermicelli at 200,000 VND/kg to customers, but they are not sold.

“This work is carried out all year round, every day is sunny. From the beginning of December, the capacities for supplying the market with goods have to be increased. This year, rainfall is frequent throughout the year, so the amount of daily production is enough to sell, not store. It rained again at the beginning of December, so this year’s New Year’s goods are even scarcer. Both vermicelli and rice paper are very popular. Professionals don’t have money to spend Tet, consumers don’t have vermicelli to eat Tet,” lamented Mr. Tam.

“Bun cake manufacturing plants in the area rely primarily on local labor, especially casual workers. Laborers working in noodle production plants earn an average income of 6-8 million/month. The community has policies to support drying yards and create favorable conditions for farms to be sure they produce for the market,” said Mr. Duong Thanh Cuong, Chairman of Nhon Phuc Community People’s Committee (An Nhon City, Binh Dinh ). knows.
